ONION VEGGIE SOUP

Ingredients:

2 (15oz approx) Cans CHICKEN BROTH (can be low-salt)
3 Large whole onions (washed, cut into halves)
Selection(about 2 Cups)Raw, washed, cut up Vegetables (example: broccoli florets, fresh
mushrooms(sliced),carrots (coin shape/small pieces),zucchini(slices),snow peas,cabbage (quartered pieces),etc.
Salt, pepper, to taste (while cooking)
Seasoning (asian or italian herbs, whatever preferred).

In a large saucepan, empty cans of chicken broth, and add to it all the above ingredients.
Bring to a boil, and simmer, at or just under boiling for 20-25minutes–depending on if
you wish to have less done, slightly crunchy veggies (which retains more vitamins w/in the vegetables),or more well done. While boiling,add seasonings to taste.NOTE: You can ALSO
Add store-bought frozen WON-Tons to the soup, or dumplings, or Spatzel, if you wish.
